Ingredients for Grass-Fed, Grain-Finished Pepper Steak:

  • 1 pound skirt steak
  • 2 tablespoons vegetable oil
  • 1 large yellow onion, thinly sliced
  • 1 green bell pepper, cored and sliced
  • 1 red bell pepper, cored and sliced

Sauce for Grass-Fed, Grain-Finished Pepper Steak:

  • ¾ cup water
  • ¼ cup honey or brown sugar
  • 3 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons cornstarch

Instructions for Grass-Fed, Grain-Finished Pepper Steak:

  1. In a bowl, combine all sauce ingredients (except cornstarch). Add skirt steak, ensuring it's coated well with the sauce, and refrigerate for 30 minutes.
  2. After marinating, remove the beef from the sauce, but be sure to reserve the sauce for later use.
  3. Heat a skillet or wok over medium heat and add vegetable oil.
  4. Add sliced onions and peppers to the skillet and stir-fry for about 5 minutes or until they're tender and slightly caramelized. Then, transfer them to a plate.
  5. In the same skillet, add the marinated beef, distributing it evenly. Cook for about 1 minute without stirring to achieve a nice sear on the steak. Then, stir the beef and continue cooking until it's browned, which should take around 2-3 minutes.
  6. Once the beef is cooked, remove it from the skillet and place it on the plate with the peppers.
  7. Whisk the cornstarch into the reserved marinade until it's well combined. Pour this mixture into the skillet and whisk continuously while bringing it to a boil. Let it boil for about 2 minutes until it thickens.
  8. Reduce the heat to medium and add the cooked onions, peppers, and steak back into the skillet. Simmer for an additional 1-2 minutes to allow the flavors to meld together.
  9. Serve the grass-fed, grain-finished pepper steak over rice, spooning the sauce generously on top.
