Recipe for 100% Grass-Fed, Grain-Finished Boneless Chuck Roast

Recipe: Succulent Slow-Cooked 100% Grass-Fed, Grain-Finished Boneless Chuck Roast

Ingredients:

  • 3 pounds 100% Grass-Fed, Grain-Finished boneless chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 carrots, peeled and cut into chunks
  • 2 celery stalks, cut into chunks
  • 1 cup beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven: Preheat your oven to 325°F (160°C).
  2. Sear the chuck roast: Season the boneless chuck roast generously with salt and pepper. Heat olive oil in a large oven-safe Dutch oven or heavy-bottomed pot over medium-high heat. Sear the chuck roast on all sides until browned and caramelized. This step helps seal in the flavors and creates a beautiful crust. Remove the roast from the pot and set it aside.
  3. Saute the aromatics: In the same pot, add the chopped onion, minced garlic, carrots, and celery. Saute the vegetables for about 5 minutes, until they soften and begin to develop a golden color.
  4. Deglaze with liquid: Add the beef broth and red wine (if using) to the pot, stirring well to scrape up any browned bits from the bottom. Stir in the tomato paste until it's fully incorporated into the liquid.
  5. Add herbs and seasonings: Tie together the rosemary sprigs, thyme sprigs, and bay leaves with kitchen twine to create a bouquet garni. Place the bouquet garni in the pot along with the seared chuck roast.
  6. Slow-cook the roast: Cover the pot with a lid and transfer it to the preheated oven.
